Sabich

TOTAL PRERP TIME: 1.5 hour
SERVES: 2-3

INGREDIENTS:
1 eggplant
1-2 hard boiled eggs
1 cucumber
1 tomato
2 scallions
sesame butter for serving
1 tbsp olive oil
a pinch of salt
juice from ½ a lemon


PROCEDURE:
Preheat the oven to 350f degrees (180c).
Slice the eggplant to a fan.
Brush with olive oil and sprinkle a bit of salt. Bake for 25 minutes.
Switch to grill, and bake for 10-15 more minutes, checking every few minutes to make sure it does't burn.
Meanwhile, boil your eggs. About 10-15 minutes.
Chop the cucumber, tomato and scallions to a finely chopped salad.
Season with olive oil, salt and juice from ½ a lemon.
Plate:
Pour a generous portion of sesame butter on a large serving plate, and spoon it side to side.
Place the baked eggplant fan on the tahini base.
Spoon the salad, onto the fan In various spots.
Slice the eggs to quarters and place on the eggplant fan, season the eggs with salt and pepper.
Serve.
